I am of the opinion that anyone can do just about anything given they read things thoroughly, study, and most importantly- try. Dolphin is the GOAT for Gamecube/Wii stuff. Very easy to use. You can reconfigure the controller setup to map to a keyboard & mouse.

If you don't want to mod, try just getting an R4 card / flashcart for your DS system. It works exactly the same as any other game cartridge, but has a removable SD card so you can load up any games you like onto it without needing to mess with your system. The R4 card can hold many games simultaneously, so it's great for space-saving [;

You'll need these just to run the games. Xbox is much less emulated then other consoles, and I personally don't bother, since most of the games weren't console-locked. Xenia is the only one I've used.
